I was tired of fighting with the “2 fork method” of shredded chicken. So a quick search on the internet yielded this awesome solution I would have never thought about..”use a mixer”.
Sunday is my meal prep day, and I usually bake my chicken in the oven, but tried cooking it in the crock-pot (with chicken broth). After quite a few hours, it was done, and starting to fall apart when I removed it. I immediately placed the chicken breasts in the KitchenAid mixer and then started out on slow with the beater blade attachment. After a few seconds it was already shredded and increasing the speed created a fluffy bowl of shredded chicken to use as a protein base in other meals.
